Job description

The purpose of this role is to provide leadership, direction and coaching on all aspects of the Restaurant, Bar and Retail Operations. You will enable the team in exceeding budgets sales and profit margin targets set down for the Business by delivering exceptional and consistent customer service and quality food offering.

The Deputy Manager will work closely with a number of departments from logistics, IT, Marketing, Buying, Finance, Retail and HR to ensure that there are there are fully optimised systems, processes and procedures in use by the Bar, Restaurant and Retail teams.

Responsibilities:
- Customer Service - To execute the Kilkenny customer experience standards in the restaurant and store, by ensuring highly visibility and effective customer service management at all times to drive continuous sales. You will ensure the ambience and atmosphere of the premises meets company standards at all time such as cleanliness, lighting, temperature and music, gathering information from the MoD on a daily basis.
- Sales - To meet and exceed target KPIs (sales, margin, conversion, stock loss, ATV ,IPT , mystery shop, core hours) while ensuring that you do so occurring the lowest possible cost.
- Food - Developing and Leading a team of chefs to deliver a culture of food excellence that creates a reputation that is worth traveling for. You will adapt cost conscious cooking, margin protection; portion controls are systematic to ensure financial viability.
- Business Results - To ensure compliance with labour management system standards, monitor labour to budget/forecast by having oversight of the weekly Roster scheduling for all departments. The DM will manage all revenue streams and expenses to create the maximum return for, ensuring the long-term growth and success of the business.
- Leadership & Execution -Ensure brand and company values are implemented consistently at all customer touch points. As DM you will set expectations, lead people, train teams, manage processes and hold people accountable for the agreed upon activities and timetables.
- Team engagement -Train and empower teams to exercise good judgment to make decisions regarding service, product quality, and customer satisfaction by adhering to company standards. Work with the team to create appropriate developmental plans that help individuals define career goals and identify the skills needed to achieve them.

Skills/Qualifications required:
- 3-5 years experience in hospitality management, including 3 years in a leadership role.
- Experience working in Retail is an advantage.
- Authority, presence and maturity clearly in charge and willing to enforce the standards and take the hard road actions rather than action plans.
- Must have recent P&L responsibility for an operation of a similar or larger scale at Deputy Manager level.
- Evidence of having built a strong operational team.
- High energy levels and accustomed to non-standard working hours and effort (whatever it takes mentality).
- Excellent leadership, communication, influencing and motivating skills are essential.
- Strong organisational skills, as well as flair for food and presentation.
- Amenable to working unsocial hours on a rostered basis (e.g. early mornings, evenings, weekends)
